Authentic Vietnamese 'Banh Mi' French Baguette Sandwich
Toasted, charred, aromatic, lemongrass chicken, pickled carrots, fresh herbs in a soft freshly baked french baguette is a truly authentic 'Vietnamese Banh Mi' sandwich. So amazingly delicious! Authentic Vietnamese 'Banh Mi'
French Baguette Sandwich
serves 3 total cooking time 2 hr
- 8 chicken thighs, deboned (about 2-3 per sandwich)
- 1 1/2 tbsp soy sauce
- 1 1/2 tbsp hoisin sauce
- 1/2 tbsp sesame oil
- 1 juiced lemon, zest
- 4-5 garlic, minced
- salt and pepper
- 1 tbsp honey
- 2 sticks of lemongrass, smashed and chopped into 1-inch pieces (optional)
- 4 tbsp ketchup
- 2 tsp chili sauce
- 2 tsp hoisin sauce
- 2 tsp mustard
- 2 tsp brown sugar
- 1 small carrot, match sticked
- 1 tbsp sugar
- 2 tbsp vinegar
- 1 tbsp water
- 3 baguettes
- 4 tbsp mayonnaise
- 1/2 small red onion, match sticked
- a handful of parsley
- in a ziplock bag, combine soy sauce, hoisin sauce, sesame oil, lemon juice, garlic, salt and pepper (and lemongrass)
- add chicken thighs, marinate for 1 hr or best to marinate for 24 hrs, take out 30 mins before baking
- for pickled carrots; in a small bowl, combine; sugar, vinegar, water, mix well, add carrots, set aside
- preheat oven to 400F
- line a baking pan with aluminum foil for easy cleaning
- lay chicken thighs in a baking pan, drizzle with honey, bake for 30 mins
- meanwhile, prepare the bbq sauce; in a small bowl combine ketchup, chili sauce, hoisin sauce, mustard, and brown sugar
- using a fork, mix everything well, set aside
- remove chicken, drain, glaze with bbq on both sides
- broil chicken for another 10 minutes
- remove, let sit for 5 minutes, cut diagonally
- open baguette to make a sandwich, toast or broil in the oven for 2-3 minutes
- generously spread mayonnaise on both sides of the baguette, add chicken, onions, cucumbers, pickled carrots, and parsley
- cut in half and serve warm
