Celebrate National Chocolate Chip Cookie Day with the best Chewy Almond Chocolate Chip Cookies
Happy National Cookie Day! In light of the best holiday, I’m sharing my favourite chocolate chip cookie recipe with you! A little different from the traditional doughy chocolate chip cookies these chewy chocolate chip cookies are made with almond flour. With a slight nuttiness, these chocolate chip cookies have a macaroon sheen, and chewiness, that gets better with time. These cookies keep their cafe style texture for days, simply keep them in an airtight container or ziplock bag. And enjoy!
Chewy Almond Chocolate Chip Cookies
total baking time: 2 hours makes 30 large cookiesingredients
- 4 cup finely milled almond flour
- 1 tsp salt
- 1 tsp baking soda
- 2 cup packed brown sugar
- 1 cup granulated sugar
- 1 1/2 cup unsalted butter, half-melted and half-browned
- 2 eggs
- 2 egg yolks
- 1/2 tbsp vanilla
- 2 cup semi-sweet chocolate chips
directions
- preheat oven to 325 degrees
- line a large baking tray (use two to cut down on baking time)
- combine flour, salt and baking soda in a bowl, whisk well, set aside
- in a small saucepan, melt butter, once butter is completely melted, pour half in a cup to cool
- continue to cook half the butter, whisking frequently, scrape sides, until brown about 4-5 minutes
- return to melted butter, combine, let cool (I put it in the freezer for 3-4 minutes)
- in a mixing bowl or stand mixer, combine butter and sugars until smooth
- add eggs, egg yolks, and vanilla, continue to beat until fluffy, 3 minutes
- stir in flour mixture into egg mixture until moistened
- add chocolate chips, combine evenly
- using plastic wrap, press to cover the dough, and let sit in the fridge for 5-10 minutes
- when ready to bake, make small balls using a tbsp measuring spoon, about 1 tbsp balls size
- set the dough balls 3 inches apart, they will spread
- bake for 18-20 minutes, turn baking tray halfway for even baking
- bake until overall golden, let cookies rest on baking sheet for 10 minutes, they will deflate
- cookies taste better next day, store in an airtight container for 3-5 days
- store in the freezer for up to 3 months in a ziplock bag
- freeze the dough by making balls and placing in an airtight container, unfreeze, bake and enjoy
