Leftover Muffin Hack - The Best 'Cake' French Toast Made with Blueberry Muffin
Costco muffin's are great, they're huge and you get two packs for $8 dollars! The only issue is that unless you're looking to finish 16 muffins within a week, it's a little tough to know what to do with them. Here's a few options; You can freeze them and simply dethaw and serve. Or make delicious cake french toast, yes, I said cake! Using Costco's muffin as the base for french toast gives you a unique sponge blueberry cake tasting french toast. It's absolutely delicious, serve with a side of fresh fruits and maple syrup for a morning treat. Give this super simple recipe a try!
- 2 Costco muffins, sliced 2 inches thick
- 4 large eggs
- 4 tbsp cream
- 1 tbsp brown sugar
- 2 tsp cinnamon
- 1 tsp vanilla
- 2 tbsp butter for cooking
directions
- in a medium-size bowl combine eggs, cream, brown sugar, cinnamon and vanilla
- preheat a non-stick skillet on medium
- drench a slice of muffin into the batter mix, drench both sides
- add 1 tbsp butter to skillet, lay a slice on to skillet, cook each side for 3-4 minutes on each side
- serve with fresh fruits and maple syrup
