Easy Vietnamese Chicken Pho Ga

When you’re looking for some comfort try my easy chicken pho soup recipe. Yes I’m taking some short cuts by you’ll still get a rich and delicious Vietnamese style soup.

Pho Ga for Two


Ingredients

For soup:

  • 2 chicken thighs
  • 1/2 onion
  • 2 shallots
  • 1 inch ginger 
  • 6 garlics
  • 1 cinnamon stick
  • 2 star anise (bonus if you have them)

Toppings:

  • 4 chicken thighs
  • 2 tbsp Korean bbq sauce
  • 2 green onions 
  • Pho Noodles 


Directions 

  1. in a large pot add olive oil
  2. sauté onions, shallots, ginger and garlic
  3. add 2 chicken thighs 
  4. fill pot with water
  5. add fish sauce, honey, star anise and cinnamon stick
  6. bring to a boil and turn down to simmer for 1-2hr
  7. toss chicken thighs in Korean bbq sauce
  8. air-fry for 20 mins, flip half-way 
  9. remove let cool and slice into pieces 
  10. make noodles, per direction 
  11. when ready to serve, layer bowl with noodles 
  12. add chicken and garnish with green onions
