The Best Maple Walnut Oatmeal Squares - Canadian Maple Cake
This ‘Maple Walnut Oatmeal’ cake is honestly my favourite cake to bake, it reminds of of Canadian winters with it’s rich sweetness of maple syrup and walnuts, that’s why I decided to name it the ‘Canadian Maple Cake’. Because of my chronic inflammation, I wanted to use some healthier ingredients, this ‘Maple Walnut Oatmeal’ cake is also made of bananas, oatmeal and coconut oil. Traditional cakes are full of white sugar and seed oil that can cause inflammation and indigestion. Bananas are rich in potassium, oatmeal is great for lowering cholesterol while improving heart health and coconut oil is anti-inflammatory. Mary with maple syrup and walnuts, these ingredients all add to the richness of this soft and delicious cake. Maple Walnut Squares - Canadian Maple Cake
Ingredients
- 3 bananas
- 1 egg, room temperature
- 1/3 cup coconut oil, melted
- 1/2 cup maple syrup
- 1 cup oatmeal flour
- 1/2 cup white flour
- 1/4 tsp nutmeg
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup walnuts, roughly chopped
- 3 tbsp chocolate chips
- 1 tbsp skor bits (optional)

- 3/4 cup walnuts, roughly chopped
- 1/4 cup maple syrup
- 2 tbsp melted butter
Direction
- Preheat oven at 350 degrees
- Line a 9x9 baking tray with parchment paper
- In a small bowl, add melted butter, maple syrup and walnuts, mix well, set aside
- In a mixer, mash bananas
- Add coconut oil, egg, and maple syrup, mix well
- In a separate bowl, mix dry ingredients, oatmeal flour, flour, nutmeg, cinnamon, baking powder, baking soda and salt. Mix well.
- Slowly add dry ingredients to mixers, just until combined don’t over mix, add walnuts
- Pour into baking tray, sprinkle chocolate chips and skor bits, top off with the butter, maple syrup walnut mixture
- And bake for 25-30 minutes or until the toothpick comes out clean
- Let stand for 5 minutes, cut into squares and serve with vanilla ice cream
