Beef Rib Rice Porridge Congee - Vietnamese Congee

Here’s a twist on one of my favourite Vietnamese comfort dishes, chao, rice porridge or also known as congee. This time I used my leftover roast beef ribs for a deliciously easy dish. Simply add all your ingredients into a large pot and let it simmer for 1-2 hrs. It’s so convenient when you’re busy getting ready for the new year. Give this easy recipe a try!
Vietnamese ‘Chao’ Rice Porridge
Serves 2-3 Total cooking time: 2 hr
Ingredients
- 1 cup white rice, rinsed
- leftover roast beef ribs
- 1/2 onion diced
- 2 pieces ginger about 1 inch each
- 2 anise star
- 1 tbsp fish sauce
- 1 tbsp chicken bouillon
- 9 cups water
Directions
- In a large pot, add all ingredients
- Bring to a boil, stir and simmer for 1-2 hours until smooth
- Add more water if you find it too thick
- Left overs can be refrigerated and reheated the next day, just add 1 cup of water and bring to a boil before serving
