Cozy Mornings Call for Skillet Coffee Cake
Some mornings just need a little extra sweetness—and this easy skillet coffee cake is perfect for those slower starts. I love it because it comes together with pantry staples, bakes in one skillet, and smells like a coffee shop. You don’t need a mixer or anything fancy—just a bowl, a skillet, and a craving for cinnamon sugar.
The streusel topping is the real star: sweet, buttery, and full of cinnamon. It crisps up beautifully in the oven and adds the perfect crunch on top of the soft, fluffy cake underneath.
Ingredients
Cake Batter:

1/2 cup butter

3/4 cup white sugar

1 egg

1 cup all-purpose flour

2 tsp baking powder

1/2 tsp salt

1 tsp vanilla extract

1/4 cup milk (or a bit more as needed)
Streusel Topping:

3/4 cup all-purpose flour

1/2 cup packed light brown sugar

2 tsp ground cinnamon

6 tbsp cold unsalted butter, diced

Preheat & Prep:
Preheat your oven to 350°F (175°C). In a small bowl, mix the streusel topping—flour, brown sugar, and cinnamon. Add the cold, diced butter and use your fingers or a fork to work it in until crumbly. Pop the bowl into the fridge while you make the cake. -
Melt the Butter:
In a 9-inch cast iron skillet, melt the butter over low heat. Pour half of it into a mixing bowl, leaving the rest in the skillet. This will give the cake a rich base and help it release easily after baking. -
Mix the Batter:
Add the sugar to your mixing bowl with the melted butter and mix until blended. Beat in the egg. Stir in the flour, baking powder, salt, and vanilla. Add milk, a little at a time, until your batter is smooth—similar to pancake batter. -
Assemble & Bake:
Pour the batter into the buttery skillet and spread it out. Sprinkle the chilled streusel topping evenly over the top. Bake for 20–30 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean. -
Cool & Serve:
Let the cake cool slightly on the stovetop before slicing. Best enjoyed warm with your morning coffee or an afternoon tea.
