Easy Fall-Apart Cajun BBQ Brisket
Making beef brisket can be a little intimidating and challenging. I find that doing a dry rub and then slow-baking the brisket gives it the best texture and taste. Brisket has a lot of fat, often adding stock in the slow cooker seems like the right thing to do to keep moisture and flavour in the big chunk of meat, but I find that it often makes the meat too soft and mushy. I prefer to give the brisket a dry rub, slow cook it in the oven, and broil it with BBQ for a more authentic restaurant-style BBQ brisket.

Brisket Seasoning Rub
4 tbsp Cajun seasoning
3 tbsp paprika
3 tbsp onion salt
3 tbsp garlic salt
1 tbsp salt
1/2 tbsp black pepper
Ingredients
1 whole beef brisket
Neutral oil
Your favourite BBQ sauce
Instructions
1. Prepare the Brisket
Pat the brisket completely dry with paper towels. In a small bowl, combine all of the seasoning rub ingredients. Rub the seasoning generously all over the brisket.
Let the brisket sit at room temperature for about 30 minutes before cooking.
2. Prepare the Baking Pan
Preheat the oven to 285°F.
Line a large baking pan with parchment paper and lightly rub the parchment with neutral oil.
Place the brisket fat side up in the pan so the meat slowly bastes in its own juices while roasting.
3. Wrap the Brisket
Lightly oil another sheet of parchment paper and place it directly over the brisket.
Cover tightly with aluminum foil, folding all edges securely to completely enclose the brisket. Use extra foil if needed to keep everything sealed well.
4. Slow Roast
Place the brisket in the oven and roast for 6 hours until extremely tender and fall-apart soft.
Remove from the oven and carefully transfer the brisket fat side down onto a tray or cutting board. Let it rest for 20 minutes before slicing or shredding.
Reserve all of the pan drippings and juices for serving.
5. Broil with BBQ Sauce
Transfer the brisket to a baking pan and generously baste with your favourite BBQ sauce.
Broil for 5–8 minutes until the sauce becomes sticky and caramelized.
6. Serve
Slice or pull apart the brisket and drizzle with the reserved pan drippings and extra BBQ sauce before serving.
Serve with mashed potatoes, roasted vegetables, coleslaw, or on toasted buns for BBQ brisket sandwiches.
