Easy Thai-Style BBQ Chicken Skewers
Smoky, sweet and savoury, these Thai-style BBQ chicken skewers are one of those recipes that are so easy to make but always feel a little more impressive than the effort they require.
The sweet Thai chili sauce gives the chicken a delicious caramelized flavour as it cooks, while the fish sauce in the basting sauce adds that salty, savoury depth. Cook them over a hot BBQ until they’re nicely charred on the outside and juicy on the inside, and you have an easy meal that tastes like something you’d order at a restaurant.
The chicken can be marinated for just 20–30 minutes if you’re short on time, but I like to let it marinate overnight when I can for even more flavour.
Ingredients
Chicken
8 chicken thighs, cubed
¼ cup sweet Thai chili sauce
1 tbsp BBQ sauce
8–10 wooden skewers, soaked in water for 5 minutes
Basting Sauce
¼ cup sweet Thai chili sauce
1 tbsp fish sauce
Directions
Marinate the chicken: Add the cubed chicken thighs, sweet Thai chili sauce and BBQ sauce to a bowl. Mix well to coat the chicken. Marinate for 20–30 minutes, or overnight for more flavour.
Prepare the BBQ: When you're ready to cook, preheat your BBQ to high heat.
Make the skewers: Thread the chicken onto the soaked wooden skewers, leaving a little space between each piece. Don't pack the chicken too tightly together—giving the pieces some room helps them cook and char more evenly.
Make the basting sauce: Mix the sweet Thai chili sauce and fish sauce together in a small bowl.
BBQ the chicken: Place the skewers on the hot BBQ. Cook for 2–3 minutes on each side, turning as they begin to char. Baste with the sauce as you turn the skewers.
Continue cooking and turning until the chicken is fully cooked through and has a nice char on the outside, about 10–12 minutes total or when the chicken reaches 165°F/74°C internally depending on the size of your chicken pieces and the heat of your BBQ.
Serve hot with extra Thai chili sauce, rice, or your favourite BBQ sides.
