Delicious Quick and Easy 'Vietnamese Cha' Beef Sausage Fresh Rolls
I love making Vietnamese fresh rolls, they are so easy and fast! Vietnamese fresh rolls are made of rice sheets that are filled with fresh veggies, vermicelli, and your favorite protein. Try filling them with shrimp chicken or beef. Serve them with savory peanut sauce for a quick lunch or appetizer.
With this recipe, I used ground beef to make little Vietnamese sausages called "Chả". Paired with sweet pepper, these fresh rolls are delicious!

'Vietnamese Cha' Beef Sausage Fresh Rolls
ingredients
- 500 g ground beef
- 1 tsp fish sauce
- 1 tbsp soy sauce
- 1 garlic minced
- salt and pepper
- 50 g vermicelli noodles, cooked per direction
- 1/2 red pepper, sliced thinly
- 1/2 yellow pepper, sliced thinly
- 3 green onion, sliced into 2-inch pieces
- 3-4 pieces of lettuce, sliced diagonally, 2-inch pieces
- 10-12 Vietnamese rice paper
peanut sauce ingredients
- 1/4 cup creamy peanut butter
- 1 tsp hoisin sauce
- 1 tsp rice vinegar
- 1 garlic minced
- 1 tsp chili flakes (optional)
directions
- combine peanut sauce ingredients, set aside
- combine ground beef and marinade ingredients, cover, and allow to marinate for at least 15 minutes
- using the ground beef, make 2-inch sausages
- on medium/high using a non-stick skillet, cook the sausages for 5-6 minutes until done
- set up your station - lay down a cutting board, set up your bowls of thinly sliced veggies, and your sausages
- using a large brim plate, one that can fit at least half of the rice paper, add warm water
- rotate and run the rice paper through the water, until moist, lay the rice paper on the flat board, be careful that it doesn't stick to itself
- fill your wrap by laying down in the middle, a piece of lettuce, lined with peppers, green onions, and sausages, allow some lettuce to stick out
- roll it by bringing the three sides inwards, and roll it upwards away from yourself to make a roll
- serve rolls with peanut sauce
- rolls are best when made fresh
