Vegan Honey Lemon Candied Crepes - Easy Chickpea Crepes



I don't know where you live but it's been almost impossible to find organic flour here. Since the pandemic hit everyone is at home baking. Thus, my hubs and I decided to try some chickpea flour recipes. Here's our fun take on vegan chickpea flour crepes. They are a bit thicker and dense compared to the traditional crepes, so we added honey and lemon juice to make them more flavourful. Give this easy recipe a try the next time you're out of flour. 

The candied lemons are just garnished, we decided to add more lemons to our diet since they're super good for you. Lemons are full of vitamin C, aids in digestion and is known to help clarify skin. Boost your health, add some lemons!

Vegan Honey Lemon Candied Crepes

makes 6 crepes 

ingredients for crepes

  • 1 1/4 cup Garbanzo bean flour
  • 1 1/3 cup water
  • 1/4 tsp salt
  • coconut oil (or butter - non-vegan) for greasing pan

ingredients for candied lemon
  • two lemons, thinly sliced
  • 1 cup of sugar
  • 1.5 cup of water 
  • parchment paper

other ingredients

  • 2 lemon for zesting and juicing
  • organic honey to drizzle in crepes

directions for crepes

  1. in a blender add flour, water, and salt
  2. blend for 1-2 minutes
  3. pre-heat a non-stick pan, on medium heat,  grease pan with a little bit of oil or butter
  4. add 1/3 cup of the flour mixture, tilt and rotate the handle of the pan allowing for a circular pour
  5. cook the crepe for 2 minutes or until the sides become crisp
  6. flip and continue to cook for another two minutes
  7. serve with your favorite fruits, honey, and berries
directions for candied lemon
  1. lay down parchment paper for finished lemons
  2. preheat a medium-size non-stick pan on medium-high heat
  3. add 1 cup of sugar and 1 cup of water
  4. with a non-stick spatula, continuously mix until sugar and water mixture starts to bubble, about 5 minutes
  5. add 1 cup of water, continue to mix for 2 minutes
  6. lay lemon slices flat on the pan
  7. let the sugar mixture bubble with lemons for 4-5 minutes until the sugar starts to caramelize
  8. using tongs, slowly remove lemons slices, place them on parchment paper
  9. allow to cool and slice to preference
  10. add as topping to desserts
  11. store in an airtight container, with parchment paper in between lemon slices

  1. when ready to serve, zest fresh lemons onto crepes, drizzle organic honey and lemon juice, sprinkle with candied lemon bits
  2. enjoy!
