Flaky & Flavorful Buffalo Curry Puffs

If you love crispy, golden pastries with a rich, spiced filling, these buffalo curry puffs are about to be your new favorite snack! They’re flaky, packed with protein, and super easy to make. Perfect for meal-prepping or when you need a quick, satisfying bite.
Buffalo meat is naturally lean and full of flavor, and when combined with warm curry spices, it makes for the most irresistible filling. Wrapped in buttery phyllo pastry and baked to golden perfection, these little puffs are a healthier take on a classic savory pastry.
What You’ll Need

1 box phyllo pastry, thawed

1 pack ground buffalo

1 tbsp curry powder

1 tsp paprika
-
1 tsp cumin
-
½ tbsp beef bouillon
-
½ tbsp fish sauce

Pinch of pepper

½ cup melted butter (for brushing)
- Cook the Buffalo Filling: In a pan over medium heat, cook the ground buffalo until browned. Add curry powder, paprika, cumin, beef bouillon, fish sauce, and pepper. Stir well and cook through. Set aside.
- Prep the Phyllo Pastry : On a flat surface, carefully peel off one sheet of phyllo pastry. Brush it with melted butter, then fold it into thirds to form a long rectangle.
- Fill & Fold: Spoon about 2 tablespoons of the buffalo mixture onto one end of the rectangle. Fold the corner down into a triangle, then continue folding over and over until you reach the end, just like folding a flag. Brush the top with butter to seal.
- Bake to Perfection: Place the curry puffs on a baking sheet and bake at 400°F for 20 minutes, or until golden brown and crispy. Enjoy!
Let them cool slightly before biting in—the inside is hot! These curry puffs are great on their own or with a side of sweet chili sauce for dipping. They also store well in the fridge and can be reheated for a quick, high-protein snack.
