Directions
- In a large soup pot, melt 1 tbsp butter over medium heat. Sear the chicken thighs until golden brown.
- Add diced onions, ginger, and star anise. Stir for about 2 minutes until fragrant.
- Pour in the water and add the chicken bouillon. Bring to a boil, then reduce heat and let simmer for 30 minutes.
- Stir in the fish sauce and add frozen dumplings. Let them cook for another 10 minutes.
- Remove the chicken thighs, dice them into smaller pieces, and return them to the pot.
- To serve, place cooked rice noodles in a bowl, ladle in the hot broth, chicken, and dumplings.
