Chicken & Marinade:

  • 1 whole chicken, cut into pieces

  • 2 cups kefir

  • 1 tbsp Frank’s Red Hot

  • 1/2 tbsp smoked paprika

Flour Coating:

  • 2 cups flour

  • 1/2 cup cornstarch

  • 1/2 tbsp smoked paprika

  • 1/2 tbsp oregano

  • 1/2 tbsp chili flakes

  • Salt & pepper to taste

For Frying:

  • 1 liter cooking oil (vegetable, canola, or peanut oil)

Instructions

  1. Marinate the Chicken

    • In a large bowl, whisk together kefir, Frank’s Red Hot, smoked paprika, onion powder, chicken bouillon, salt, and pepper.

    • Add chicken pieces, cover, and marinate for at least 24 hours in the fridge.

  2. Prepare the Coating

    • In one large bowl, mix flour, cornstarch, smoked paprika, oregano, chili flakes, salt, and pepper.

    • In another bowl, pour the leftover kefir marinade.

  3. Dredge the Chicken

    • Take one piece of chicken, coat it in the flour mixture, then dip it into the kefir marinade, then back into the flour.

    • Let the coated chicken rest in the flour for 5–10 minutes for extra crunch.

  4. Fry the Chicken

    • Heat 1 liter of oil in a heavy-bottomed pot over low-medium heat.

    • Fry chicken pieces for 12–15 minutes until golden brown and crispy.
