🥥 Hearty Thai Lamb Stew
Warm, cozy, and infused with the flavours of Thailand — this comforting lamb stew is perfect for chilly fall evenings. Tender pieces of lamb simmer in a creamy coconut curry broth with carrots and potatoes, then served over soft rice noodles and topped with fresh green onions.
Ingredients

½ pack rice noodles, cooked per package

1 lb lamb chunks, cubed

2-inch piece of ginger, thinly sliced

3 garlic cloves, crushed and sliced

1 small onion, diced
-
1 can coconut milk
-
1 can coconut water
-
3 tbsp red Thai curry paste
-
1 lime, juiced
-
3 tbsp fish sauce
-
2 tbsp honey
-
Pinch of salt and pepper

1 cup mini potatoes, halved
-
2 carrots, cut into ½-inch pieces

3 tbsp butter
-
2 tbsp chopped green onions, for garnish
Directions

Sear the Lamb

Cube the lamb and sear it in batches in butter over medium-high heat until lightly browned. Remove and set aside.

Sauté the Aromatics

In the same pot, add onion, ginger, and garlic. Cook for 2 minutes until fragrant.

Build the Base

Return the lamb to the pot. Add coconut milk, coconut water, and red Thai curry paste. Stir to combine and bring to a gentle boil.

Simmer Slowly

Reduce heat to low, cover, and simmer for 2 hours. Check occasionally and add a bit of water if the liquid drops below the lamb.

Add Flavor & Veggies

After 1 hour of simmering, add lime juice, fish sauce, honey, salt, pepper, potatoes, and carrots. Continue to simmer until the lamb is tender and potatoes are soft.
