Juicy, zesty, and full of Thai-inspired flavour, these grilled chicken skewers are quick to prepare and perfect for weeknight dinners or BBQ nights. The lemon, ginger, garlic, and paprika give the chicken brightness and warmth—while a light char from the grill brings everything together.
🛒 Ingredients

½ pack chicken (Costco pack)

1 lime — juice + zest + 1 for serving

1 tbsp fresh ginger, grated

½ tbsp garlic, minced
-
1 tbsp paprika
-
½ tbsp salt
-
½ tbsp black pepper
To serve:

Fresh parsley, chopped
-
Green onions, chopped
-
Lime wedges
👩🍳 Instructions
1. Marinate the Chicken
Add chicken to a bowl. Mix in lime juice + zest, ginger, garlic, paprika, salt, and pepper. Coat well.
Let it marinate at least 30 minutes, or longer for deeper flavour.
2. Thread the Skewers
Place chicken pieces on skewers, spacing them out slightly.
Use your fingers to spread the pieces evenly—don’t overcrowd so they char nicely.
3. Grill
Heat grill (or grill pan) to medium-high.
Cook chicken for 5–6 minutes per side, until cooked through and lightly charred.
4. Garnish & Serve
Transfer skewers to a plate, sprinkle with green onions, and lay lime wedges around the sides for squeezing.
Serve with:
