This is my go-to chicken souvlaki recipe when I need something quick, flavorful, and versatile. The lemon, oregano, and paprika give the chicken that classic Greek flavor, while keeping it juicy and light. It’s perfect for wraps, rice plates, salads, or meal prep — simple ingredients, big payoff, and always a crowd-pleaser.
Ingredients
½ pack chicken (Costco-sized), cut into chunks
Juice and zest of 1 lemon
1 tbsp dried oregano
1 tbsp paprika
½ tbsp salt
½ tbsp black pepper
2 tbsp fresh parsley, chopped
2 tbsp fresh feta, crumbled
Lemon wedges, for serving
Directions
1. Marinate the Chicken
In a bowl, combine chicken, lemon juice and zest, oregano, paprika, salt, pepper, and parsley.
Mix well until evenly coated.
Marinate for at least 20 minutes, or up to overnight for more flavor.
2. Skewer & Grill
Thread marinated chicken onto skewers.
Preheat grill to medium-high heat.
Grill for 5–6 minutes per side, until fully cooked and lightly charred.
3. Serve
Transfer to a platter, garnish with fresh parsley and crumbled feta, and add lemon wedges around the plate.
Serve in warm pita wraps, over rice, or with a fresh salad.
