This spicy chicken bok choy soup is my go-to whenever I’m feeling under the weather, run down, or just craving something deeply comforting. It’s light yet nourishing, gently spicy, and filled with ginger, garlic, tender chicken, and fresh bok choy—ingredients that instantly lift your mood and support your immune system.
It’s a one-pot, no-fuss soup that tastes like it’s doing something good for your body with every spoonful. Warm, soothing, and grounding—this is the kind of soup that makes you feel better fast 🤍
Ingredients
6–8 chicken thighs
1 tbsp chicken bouillon
1 small onion, diced
3 cloves garlic, pressed
1 inch ginger, sliced thick
2 tsp salt
1 tsp black pepper
1 chili pepper, broken in half
1.7 L water
½ tbsp fish sauce
Handful of bok choy, washed and ends removed
Cooked rice noodles (½ pack)
3 green onions, sliced (for garnish)
How to Make Spicy Chicken Bok Choy Soup
1. Sauté the Chicken
In a large pot over medium heat, lightly sauté the chicken thighs until they begin to brown and release their juices.
2. Build the Base
Add the diced onion and sauté until translucent. Pour in the water, then add garlic, ginger, chili, salt, pepper, and chicken bouillon.
3. Simmer & Infuse
Bring the soup to a boil, then reduce to a gentle simmer. Cook for 15 minutes, then remove the chili pepper to keep the heat balanced.
4. Slow Simmer
Continue simmering for another 30 minutes, allowing the broth to become rich and flavorful and the chicken tender.
5. Add Bok Choy
Add the bok choy and cook for 15 minutes, just until tender and vibrant. Stir in the fish sauce to finish the broth.
To Serve
Place cooked rice noodles into a bowl
Ladle hot chicken soup with bok choy over the noodles
Garnish with fresh green onions
Serve immediately and enjoy while hot.
