Chinese Beef Noodle Stir Fry

It was tough to pick which recipe to share first! My Beef Noodle Stir Fry is one of my favorite recipes. Especially when I'm craving vermicelli noodles! It's super quick and easy! Great recipe to try for a fast dinner. I hope you give it a try!
Beef Noodle Stir-Fry
serves 4 total cooking time: 30 mins
ingredients
- 1/2 package of vermicelli noodles
- 1lb fast fry steak
- 1/2 yellow sweet pepper
- 1/2 green sweet pepper
- 1/2 orange sweet pepper
- 1/2 small sweet onion
- 5 mushrooms
- 1 egg
- 2 green onions for garnish
- 6 tbsp of cooking oil
- 6 tbsp of dark soy sauce
- 2 tbsp of sesame oil
- salt and pepper
marinate for steak
- 3 tsp of dark soy sauce
- 1 tsp of sesame oil
- pinch of salt and pepper
- 1/2 package vermicelli noodles
directions
- prep vermicelli noodles as per package, and run under cold water to ensure noodles won't stick or prep the noodles by soaking them for 20 minutes in cold water.
- cut steak into strips or 1-inch pieces
- marinate fast fry steak
- let sit for 15 minutes in the fridge
- preheat wok or wide brim non-stick skillet on medium/high.
- add 2 tbsp of cooking oil.
- add steak to pan. Let cook for 5 minutes. Stir occasionally.
- remove steak and place in a bowl.
- using the same pan, return to heat on medium.
- add 2 tbsp of cooking oil.
- add diced veggies, stirring occasionally, let cook for 4 minutes, until the veggies have some color.
- with your wooden spoon, push the veggies to one side of the pan.
- on the empty side of the pan, add egg. Let sit for 1 minute, then scramble with your wooden spoon.
- combine scrambled egg with veggies.
- return the steak to the pan. Stir to mix.
- add vermicelli noodles.
- add 2 tbsp of cooking oil, soy sauce, and sesame oil.
- ross to mix all ingredients. Add salt and pepper based on your taste preference.
- IF using cooked vermicelli noodles, serve right away.
- OR Cover for 5 minutes to let the noodles soften if using pre-soaked vermicelli noodles. (add a little water if the noodles seem undercooked, cover with lid, and the noodles will soften)
- Garnish with finely chopped green onions.
