RECIPE: "Must-Try" Delicious JAPANESE MUSHROOM SOUP



Aromatic and flavourful, this Japanese soup is perfect for colder days.  Made with ginger, carrots, and onions, and served with mushrooms and noodles, this soup is light and delicious. The best thing is that it's super easy to make, try this Japanese Mushroom soup the next time you need some comfort. Give this simple recipe a try!




Japanese Mushroom Soup

serves 4 total cooking time: 20 mins

ingredients
  • 1 celery, diced
  • 1 carrot, peeled and diced
  • 1 small piece of peeled ginger
  • ½ sweet onion, diced
  • 900ml vegetarian or chicken broth
  • 6 mushrooms, sliced thinly 
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • pinch of salt and pepper
  • 1 portion of glass noodles
  • 2 green onion for garnish
directions
  1. soak 1 portion of glass noodles (handful) in cold water and set aside for 7-10 minutes. Use scissors to cut into 3 parts for smaller pieces.
  2. preheat a small pot on medium heat
  3. add sesame oil and diced celery, carrots, ginger, and onions
  4. saute until golden
  5. add vegetarian or chicken broth
  6. bring to a boil
  7. remove from heat and strain into another pot
  8. the broth should be clear, add soy sauce, salt, and pepper
  9. bring to a boil.
  10. in your bowl, add clear noodles and mushrooms.
  11. carefully pour the boiling broth on noodles and mushroom 
  12. let sit for 5 minutes and serve

  2. Glass noodles are a clear, rather transparent noodle, made of starch and water. You can easily find them in most grocery stores in the international section. 🙄 What a poor previous post review of a recipe just because they could not discern one ingredient.
