Eggslut Best Egg Breakfast Sandwich

Happy World Egg Day! Today we started out day with the best egg breakfast sandwich, the Eggslut! Nortorious for serving up delicious egg based dishes, this Los Angeles restaurant made egg their obsession. Famous for their eggslut sandwich, it has become a must for all egg lovers.  This sandwich is a fun play on fluffy scramble eggs, caramelized onions, cheddar cheese and sriracha mayo on a brioche bun. For my at home version, we added mushrooms to my scrambled eggs. Super soft, delicious and flavourful, this egg sandwich is a must try! Give this quick recipe the next time you're having breakfast or brunch. 

Eggslut Best Egg Breakfast Sandwich


‘The Eggslut’ Best Egg Breakfast Sandwich

Serves: 2 Total cooking time: 15 mins

  • five large eggs
  • half an onion
  • 2 slices of cheddar cheese
  • 1 tbsp sriracha
  • 1/4 cup mayo
  • 2 brioche buns
  1. preheat a non-stick pan on medium high
  2. in a bowl add eggs and gently whisk, pour egg into pan, using a spatula, pull fold the egg forward, then cut and scramble, cook for 3-4 minutes, remove and keep warm
  3. in a small pan, add thinly sliced onions, let cook down, stir occasionally, remove and keep warm
  4. in a small sauce bowl, add mayo and sriracha, mix well
  5. when ready to serve, prepare your bun by lightly toasting
  6. lay bun down on a baking tray, lined with parchment paper, add scramble eggs, top with chedder
  7. broil on high until cheese is melted, remove and layer with onions
  8. add sriracha mayo to your top bun, and serve warm
