Best Vietnamese Pineapple Fried Rice - Better than Take-out
I was craving some Chinese food, so I decided to make my healthy ‘Pineapple Fried Rice’. It’s so easy and quick to make especially if you have leftover rice. The secret to restaurant style pineapple fried rice is to add the pineapple last so they won’t get mushy. Try this super easy recipe for better than takeout fried rice!
Pineapple Fried Rice
Cooking time: 20 mins Serves 2
Ingredients
• 1.5 cup leftover rice
• 4 chicken thighs, cubed
• 1 cup frozen veggies
• 1 egg
• 1/2 cup fresh pineapple, sliced
• 1/3 cup soy sauce
• 1 tbsp hoisin sauce
• 1/2 tbsp fish sauce
• 1 tbsp butter for cooking
Directions
- In a high brim pan, on medium heat, add butter and chicken, cook until done
- Add frozen veggies, let cook for 2 mins
- Add egg, scramble
- Add rice, mix well
- Combine sauce in small bowl, add to rice and mix well
- Fold in fresh pineapples, combine well - add your pineapple at the end or else they will get mushy
- Garnish with sesame seeds
