Creamy Chicken Marinara Gnocchi (Costco Hack Dinner!)
If you’ve got a pack of Costco gnocchi and a jar of their White Linen marinara, you’re already halfway to dinner. This recipe is my go-to when I need something cozy, filling, and low-effort—but still tastes like I put in a lot more work than I actually did.
The gnocchi are soft and chewy, the chicken thighs stay juicy, and the sauce is creamy, rich, and just a little tangy from the sour cream. It’s a comforting meal that’s perfect for weeknights, and it feeds a crowd or makes the best leftovers.
🛒 Ingredients

1 pack Costco gnocchi, cooked and tossed in olive oil

1 jar White Linen marinara sauce (from Costco)

12 chicken thighs

1/2 cup sour cream

1/2 tbsp dried oregano

1 tbsp chicken bouillon

Pinch of salt and pepper

1 tbsp butter or olive oil (for cooking)
🔪 Directions

Cook the Gnocchi
Follow the package instructions to cook your gnocchi. Once done, toss them with a little olive oil and set aside so they don’t stick. -
Sauté the Chicken
Heat butter in a large skillet over medium-high heat. Add chicken thighs and cook for 7–10 minutes. Use kitchen scissors to cut the chicken into bite-sized pieces right in the pan. Sprinkle in the chicken bouillon and cook for another 3 minutes, until the chicken is golden and cooked through. -
Make the Sauce
Pour in the jar of marinara, add the sour cream, oregano, and a pinch of salt and pepper. Stir everything together and let it simmer for 5 minutes so the flavors meld. -
Toss & Serve
Add the cooked gnocchi to the pan and gently toss everything together until the gnocchi are coated in the creamy tomato sauce. Serve warm—preferably with a sprinkle of parmesan or a side of crusty garlic bread!
