2 Chinese red dates, halved and pitted

3 regular dates, chopped

1 apple, chopped

1/2 Asian pear, chopped (optional)

1 snow fungus, soaked in water until soft, center removed and torn into small pieces

1 tbsp raw honey (added after cooking)
Instructions

Prep the Snow Fungus – Soak the snow fungus in water for 15–20 minutes until soft. Trim off the hard center and chop the rest into small bite-sized pieces.

Simmer the Soup – In a small pot, bring the water, dates, apple, pear, goji berries, and snow fungus to a boil. Reduce heat and let it gently simmer for 20–40 minutes.

Sweeten & Serve – Turn off the heat. Once slightly cooled, stir in raw honey. Serve warm.
Tip: You can refrigerate leftovers and reheat each day — the soup actually gets sweeter and richer in texture over time.
