Easy Sour Cream Chocolate Loaf Cake

Some days just call for a rich, chocolatey treat—something simple, cozy, and absolutely delicious. This easy chocolate loaf is one of my go-to bakes because it’s incredibly moist, thanks to the sour cream, and has just the right amount of sweetness. Plus, the addition of hot coffee deepens the chocolate flavor, making it taste like something straight from a bakery.

It’s perfect with a cup of tea, a morning coffee, or as an afternoon pick-me-up. And the best part? You don’t need any fancy ingredients—just pantry staples and one bowl for wet ingredients, one for dry.

Ingredients

For the Loaf:

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 pack vanilla sugar
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ½ cup melted butter
  • 3 eggs
  • 1 cup sour cream
  • ⅔ cup hot coffee
  • 1 cup chocolate chips

For the Chocolate Glaze:

  • ½ cup chocolate chips, melted
  • ½ cup sour cream

Directions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with butter.
  2. Mix the Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, brown sugar, vanilla sugar, baking powder, and baking soda until well combined.
  3. Combine the Wet Ingredients: In a separate bowl, add the melted butter, eggs, and sour cream. Slowly pour in the hot coffee while mixing—this step enhances the chocolate flavor.
  4. Combine & Fold in Chocolate Chips: Gently fold the wet ingredients into the dry mixture. Stir until just combined, then fold in the chocolate chips.
  5. Bake: Pour the batter into the prepared loaf pan and bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely before adding the glaze.
  6. Make the Chocolate Glaze: Melt ½ cup of chocolate chips, then mix in ½ cup sour cream until smooth and glossy. Spread over the cooled loaf.
  7. Slice & Enjoy! Let the glaze set for a few minutes before slicing. Serve with a hot drink, or just enjoy a piece straight from the loaf—no judgment here!
