Lamb, Potatoes & Rice – Comfort on a Plate 🐑🍚🥔

If you want a hearty, stick-to-your-ribs kind of dinner, this lamb, potatoes, and rice dish delivers every time. Tender, juicy lamb shanks, smoky from the grill, are paired with buttery potatoes and fluffy seasoned rice for the ultimate comfort meal. It’s rustic, flavorful, and perfect for feeding a hungry family.

The best part? It looks fancy but is surprisingly easy to make.

Ingredients

  • 6–8 lamb shanks, cooked

  • ½ cup BBQ sauce

  • ½ cup cooked fingerling potatoes

  • 2 cups rice

  • 1 carrot, finely diced

  • 1 small onion, finely diced

  • 1 pepper, finely diced

  • 1 garlic clove, pressed

  • ½ tbsp oregano

  • 1 tbsp chicken bouillon

  • ½ tbsp Vegeta

  • Pinch of salt and pepper

  • 4 cups water

Directions

  1. Grill the Lamb – Marinate lamb shanks in BBQ sauce. Grill on medium heat for 6–7 minutes per side. Set aside to rest.

  2. Cook the Potatoes – In a small pot, bring salted water to a boil. Add potatoes and cook until tender, about 30 minutes.

  3. Sauté the Veggies – In a large oven-safe pan, sauté carrots, onion, pepper, and garlic until the onion is translucent.

  4. Make the Rice – Add rice and 4 cups of water to the pan. Stir in oregano, Vegeta, chicken bouillon, salt, and pepper. Bring to a boil.

  5. Layer the Lamb – Arrange grilled lamb shanks on top of the rice.

  6. Bake – Cover and bake at 400°F for 25 minutes, until rice is fluffy and lamb is fully heated through.

  7. Serve – Plate with the potatoes for a hearty, comforting dinner.

Tip: You can swap fingerling potatoes for baby potatoes — just cut them in half for faster cooking.
