Better than Uncle Ben's Long Grain and Wild Rice
Growing up as Asian Canadian, we always had jasmine rice with every meal. Rice is great but it can get a bit boring. I love the firmer, dryer texture of long grain and wild rice. It's chewier, higher in protein, and antioxidants than regular rice. A whole grain, long-grain, and wild rice is better for your heart health and can lower your risk of diabetes. Here's a simple recipe for a delicious side dish, perfect for roasted chicken or fish. Give this easy recipe a try.
Uncle Ben's Copycat Long Grain and Wild Rice
total cooking time: 25 mins serves 3-4

ingredients
- 2 cups of long grain and wild rice blend (Floating Leaf Wild Blend)
- 1 cup of chicken stock
- 1 cup tomato sauce
- 1/2 small carrot minced
- 1 garlic minced
- 1 tsp cumin
- 1 tsp onion salt
- 1 tsp smoked paprika
- water (as recommended by rice cooking directions reduced by 1 cup)
directions
- in a pot combine chicken stock, tomato sauce, carrot, garlic, cumin, onion salt, and smoked paprika
- add rinsed rice, and 3 1/2 cup of water (or what's recommended for your type of rice)
- bring to a boil
- over tightly, and reduce to a low simmer for 25 mins
- remove from heat and let it stand for 5 minutes with the lid
- fluff with a fork and serve
- enjoy!
