Plum cake - Rich and Flavourful Desserts
I always feel bad throwing out fruits that ripen too quickly, especially when they’re sweet and flavourful. So when my plums started softening, I decided it was time to use them in a dessert. I’ve been avoiding processed sugar it’s been difficult finding the right recipe. I’ve decided to use maple syrup to sweeten the cake since it’s better for your heart health. Paired with cinnamon and plums, this cake is a flavourful twist on fruit cakes. Give this recipe a try!
Plum Cake
serves 4-6 total baking time 90mins
ingredients
- 1 cup all purpose flour
- 1/2 cup almond flour
- 1 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 tsp vanilla sugar or syrup
- 1/4 cup butter, soft and extra for greasing pan
- 1 cup maple syrup or white sugar
- 1 cup kefir or milk
- 1 egg
- 1/2 tbsp brown sugar
- 5 plums, skinned, pitted and quartered
directions
- preheat oven to 350 degrees
- grease circular 8inch baking pan
- in a medium bowl, mix dry ingredients, flour, almond flour, baking powder, salt and vanilla sugar
- in a mixer, cream together butter and maple syrup, add egg and kefir
- add dry ingredients, mix well
- fill baking pan, add plums on top, sprinkle brown sugar on top
- bake for 70-80 mins - yes it will take that long to bake
- remove and let cool
- serve with vanilla ice cream
