Chewy, Saucy Korean Noodles (In 15 Minutes!)

Some nights, I just want something fun to eat — and these Korean noodles hit the spot every time. They’re chewy, saucy, buttery, and loaded with veggies. Think: comfort food with a kick of Korean BBQ flavor.

The best part? You only need one pan, a handful of ingredients, and 15 minutes. Let’s get into it.

🥢 What You’ll Need:

  • 1/2 bag Korean sweet potato noodles (cooked + rinsed in cold water)

  • 1/2 carrot, ribboned with a veggie peeler

  • 1/2 onion, thinly sliced lengthwise

  • 2 mushrooms, thinly sliced

  • 1/2 cup green beans, chopped in thirds

  • 1/2 cup Korean BBQ sauce (store-bought or homemade)

  • 1 tbsp butter (for that glossy stir-fry magic)

🍜 How to Make It:

  1. Cook the Noodles
    Boil your sweet potato noodles until soft. Drain and rinse under cold water to stop the cooking and keep them bouncy. Set aside.

  2. Sauté the Veggies
    In a skillet over medium heat, melt the butter. Add your carrots, onions, mushrooms, and green beans. Stir-fry until the onions look translucent and the veggies are tender-crisp.

  3. Toss It All Together
    Add the noodles to the pan along with the Korean BBQ sauce. Mix well and cook for another 5 minutes until everything is coated and warmed through.

  4. Garnish & Serve
    Top with sesame seeds, a fried egg, or your favorite protein (I love it with grilled tofu or leftover chicken).

✨Tips:

  • Don’t skip the cold rinse — it keeps the noodles from getting sticky.

  • You can sub in any veggies you have on hand. Broccoli, bell peppers, or shredded cabbage work great too.

  • Want more heat? Add gochujang or chili flakes.
