Some nights, I just want something fun to eat — and these Korean noodles hit the spot every time. They’re chewy, saucy, buttery, and loaded with veggies. Think: comfort food with a kick of Korean BBQ flavor.
The best part? You only need one pan, a handful of ingredients, and 15 minutes. Let’s get into it.
🥢 What You’ll Need:

1/2 bag Korean sweet potato noodles (cooked + rinsed in cold water)

1/2 carrot, ribboned with a veggie peeler

1/2 onion, thinly sliced lengthwise

2 mushrooms, thinly sliced

1/2 cup green beans, chopped in thirds

1/2 cup Korean BBQ sauce (store-bought or homemade)

1 tbsp butter (for that glossy stir-fry magic)

Cook the Noodles
Boil your sweet potato noodles until soft. Drain and rinse under cold water to stop the cooking and keep them bouncy. Set aside. -
Sauté the Veggies
