Glowy Skin Carrot Soup (So Easy, It’s Almost a Secret)
There’s something about this soup that makes people think I’ve been cooking all day—but really, it’s one of the easiest recipes I know. It’s cozy, creamy, and full of beta-carotene (hello, glowing skin 👋). This carrot soup is always a hit at dinner parties or on chill weeknights, and it comes together with minimal effort and maximum flavor.
Here’s how I make it:
🥕 Ingredients
-
3 large carrots
-
3 cloves garlic
-
1 small onion, quartered
-
1/2 tbsp grated ginger
-
1/2 tsp cinnamon
-
1/4 tsp nutmeg
-
1 tbsp chicken bouillon
-
1.7L water
-
Butter for sautéing
-
Salt & pepper to taste
-
Optional: cream or hot water to thin
-
Croutons for topping
🧡 How to Make It
-
Roast the Veggies
Preheat the oven to 350°F. Place carrots, garlic, and onion on a baking pan and roast for 20 minutes until lightly golden and fragrant. -
Sauté & Simmer
In a large pot, melt some butter and toss in the roasted veggies. Stir to coat. Add water, ginger, cinnamon, nutmeg, and chicken bouillon. Bring to a boil, then reduce heat and simmer for 10 minutes. -
Blend Until Smooth
Turn off the heat. Use a metal immersion blender to purée until velvety smooth. If the soup’s a bit thick (depending on carrot size), add a splash of boiling water or cream until you get the texture you like. -
Season & Serve
Add salt and pepper to taste. Ladle into bowls and top with crunchy croutons.
✨ Why You’ll Love It
-
It’s loaded with skin-loving beta-carotene
-
It tastes gourmet but takes barely any effort
-
It freezes beautifully
-
It’s naturally sweet, creamy, and comforting
This soup makes me feel like I’m doing something good for my skin and my soul—all in one pot. Try it once, and you’ll come back to it again and again.
