Deliciously Soft and Moist Chocolate Cupcakes

Chocolate Cupcakes
yield 16 cupcakes total baking time 25 mins
ingredients- 1 1/3 cups all-purpose flour
- 1/2 cup cocoa powder
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup melted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1/2 cup whole milk
- 1/2 cup hot water
- 1/4 tsp ground coffee
directions
- preheat oven to 350 degrees
- line a muffin tray with cupcake liners, set aside
- in a medium bowl, sift together, flour, cocoa powder, baking soda, baking powder, and salt, set aside
- in a larger bowl or mixing bowl, on medium, beat together melted butter, and sugar until fluffy
- add eggs, vanilla, milk, mix well, add hot water and ground coffee
- add dry ingredients
- using a measuring cup, fill cupcake liners 3/4 full
- bake for 18-20 mins or until done, a toothpick should be clear after inserting in the middle
- let cool on a rack and frost with your favorite frosting
