Classic Fluffy Vanilla Cupcake

Classic Vanilla Cupcakes
serves 24 total baking time 35mins
ingredients
- 1/2 tsp salt
- 3 tsp baking powder
- 1/4 tsp baking soda
- 2 1/2 cup flour
- 1 cup unsalted butter, melted
- 1 1/2 cup granulated sugar
- 4 large eggs
- 1 1/4 cup buttermilk
directions
- preheat oven to 350 degrees
- line a muffin tray with cupcake liners, set aside
- melt butter, set aside
- in a medium bowl, sift salt, baking powder, baking soda, flour and set aside
- in a larger bowl or mixer, on medium, beat together butter and sugar until fluffy
- add eggs and buttermilk, beat together well
- add dry ingredients, add in two batches, continue mixing
- using a measuring cup, fill cupcake liners 3/4 full
- bake cupcakes for 14-17 minutes or until a toothpick is clean when placed in the middle of the cupcake
- tip: use this recipe to make a cake - fill two 9-inch baking pan, bake for 24-27 minutes

freezing
- if you want to frost them in a later date simply placed cooled cupcakes in a ziplock bag and place them in your freezer
- unfreeze them 4-5 hours prior to frosting
- they will taste like they were baked that day!
- cupcakes can last up to 2 months in the fridge if properly stored
