Easy Authentic Vietnamese Chicken Pho Noodle Soup

Chicken Pho Soup

ingredients
My Pho Soup Kit Spices -- which can be purchased below or use 1 tbsp spoon of allspice seeds, coriander seed, 2 cinnamon sticks, and 3 anise stars.
- 900 ml chicken broth
- 1 chicken breast
- 1 sweet onion
- 3 cloves garlic
- 4 ginger slices
- 1 carrot
- 1 tbsp fish sauce
- 1/2 rice noodles prepared based on package directions
- spring mix or lettuce (served fresh)
- bean sprout, mushrooms, bok choy, or any other veggies (serve fresh)
directions
- cook noodles per package directions
- on medium heat in a small pan, toast spices, garlic, ginger, and onions
- prepare the broth:
- preheat a medium pot on medium/high, add chicken broth
- add your toasted spices, onion, garlic, ginger, sugar, and fish sauce to the pot
- bring to a boil, add chicken breast
- let the soup boil for 5-6 minutes, turn down to low-medium, let simmer for 30 mins or longer
- remove the chicken breast, let rest for 5 minutes, cut into smaller pieces
- strain the broth
- taste, add salt and pepper to soup based on your preference
- in a bowl, add noodles, chicken, veggies and cover with broth
- serve with sriracha and hoisin sauce for a more authentic flavor
