Easy Authentic Vietnamese Chicken Pho Noodle Soup

This is the easiest Vietnamese Pho Soup you can make in less than 1 hr!

Chicken Pho Soup

serves 2 total cooking time 45 mins



ingredients

My Pho Soup Kit Spices -- which can be purchased below or use 1 tbsp spoon of allspice seeds, coriander seed, 2 cinnamon sticks, and 3 anise stars. 
  • 900 ml chicken broth
  • 1 chicken breast
  • 1 sweet onion
  • 3 cloves garlic
  • 4 ginger slices
  • 1 carrot
  • 1 tbsp fish sauce
  • 1/2 rice noodles prepared based on package directions
  • spring mix or lettuce (served fresh)
  • bean sprout, mushrooms, bok choy, or any other veggies (serve fresh)

directions


  1. cook noodles per package directions
  2. on medium heat in a small pan,  toast spices, garlic, ginger, and onions
  3. prepare the broth:
  4. preheat a medium pot on medium/high, add chicken broth
  5. add  your toasted spices, onion, garlic, ginger, sugar, and fish sauce to the pot
  6. bring to a boil, add chicken breast
  7. let the soup boil for 5-6 minutes, turn down to low-medium, let simmer for 30 mins or longer
  8. remove the chicken breast, let rest for 5 minutes, cut into smaller pieces
  9. strain the broth
  10. taste, add salt and pepper to soup based on your preference
  11. in a bowl, add noodles, chicken, veggies and cover with broth
  12. serve with sriracha and hoisin sauce for a more authentic flavor
