Easy Hearty Homestyle Minestrone Soup
Hearty comforting Minestrone soup is a great soup to make when you're out of ideas and trying to empty the pantry. It's tough to know how to use beans but they are a great addition to your diet. Beans are proven to help reduce cholesterol and improve gut health. This delicious soup is made with white and red kidney beans, a high source of protein, vitamins, folate, and antioxidants. Along with fresh veggies, I love adding tiny Riscossa pasta to make this soup even better. Give this awesome recipe a try!
Easy Hearty Minestrone Soup
total cooking time 45 mins serves 4-5
ingredients- 1 celery, diced
- 1 carrot, diced
- 1 can white kidney beans
- 1 can red kidney beads
- 1 tomato, diced
- 3 tbsp tomato paste
- 2-3 cloves garlic, minced
- 1 tsp oregano
- 1 tsp rosemary
- 1 tsp olive oil
- 1 vegetarian bouillon or beef bouillon
- 1-inch parmesan cube
- 8.5 cups water
- salt and pepper
- 1/3 cup pasta noodles (I used Riscossa pasta)
directions
- in a soup pot, combine all ingredients except pasta
- bring to a boil, stir occasionally
- turn down to low, and let simmer for 30 minutes
- bring to a boil again, add pasta, stir occassionally
- continue cooking for another 15-20 minutes, until the pasta is soft
- serve warm
- enjoy!
- tip: to store, refrigerate, when ready to serve again add a 1/4 cup of water, stir well to mix, serve warm
