We should take this time to nurture our bodies and boosting our immunity. Soup is comfort food, especially when made with fresh ingredients like carrots. Carrots are a good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants. They help with weight loss and have been linked to lower cholesterol, and even improving eye health!

Creamy carrot soup always seemed a little intimidating to make but with this quick and easy recipe, you can have restaurant-style carrot soup any evening of the week. Give yourself the extra immunity boost with the addition of garlic and ginger. Try this recipe the next time you're looking for a cozy meal.

Creamy Carrot Soup

total cooking time: 45 mins serves 3-4


ingredients
  • 5-6 carrots, peeled and sliced (about 3-4 cups of carrots)
  • 1/2 yellow onion, diced
  • 1/2 tsp grated ginger
  • 2 cloves crushed garlic
  • 1 tsp oregano
  • 1/2 tsp rosemary
  • 1/2 tsp thyme
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tbsp chicken bouillon
  • 4 cups of water
  • 1/2 cup cream or milk alternative (optional for vegans)
  • optional: bread (for serving)

directions

  1. in a dutch oven or soup pot, combine carrots, onions, ginger, garlic, oregano, rosemary, thyme, butter, and olive oil
  2. on high/medium heat, let everything cook together for 3-4 minutes
  3. add chicken broth, and water, bring to a boil, turn down to low (should be just enough water to cover the carrots)
  4. let cook until soft about 20-25 minutes
  5. remove off heat, using a hand blender, puree the soup
  6. when ready to serve, bowl the carrot soup, add 1 tbsp of cream or milk alternative
  7. stir and enjoy
