Crispy Tofu Peanut Sauce Rice Buddha Bowl - Quick Healthy and Easy Vegan Lunch Bowl
One of my favorite things to have for lunch is tofu. It's super versatile and easy to use. Serve with this rich and creamy peanut sauce it's perfect for an easy and healthy lunch. Give this easy recipe a try!
Crispy Tofu Peanut Sauce Rice Bowl
serves 3 total cooking time: 30 minutes
ingredients
- 1 tofu block
- 1 tbsp cornstarch
- 1/3 cup peanut butter
- 2 tbsp soy sauce
- 1/2 tbsp honey
- 1/2 tbsp sesame oil
- 1/2 tsp chili pepper flakes
- 1/3 cup water
- 1/2 cup cooking oil for frying
- sesame seeds optional for garnish
- cooked rice
- steam veggies or seaweed salad for serving
directions
- prep tofu by placing on a cutting board, place tofu between two paper towels, place heavy pan or cutting board on tofu, let sit for 10 minutes
- remove tofu from paper towel, slice the tofu in two, then cube the tofu
- add 1 tbsp cornstarch to a medium bowl, toss tofu cubes in cornstarch
- preheat frying pan with cooking oil on medium/high heat
- add tofu cubes in a single layer, try cooking your tofu in two batches
- flip tofu, cook for two minutes on each side, remove when tofu starts to get golden
- line a metal bowl with a paper towel, remove the tofu, and let oil excess oil absorb
- the tofu will continue to cook after you place it in the bowl
- in a medium bowl, add peanut butter, soy sauce, honey, sesame oil, chili flakes, and water
- mix well until smooth, add the tofu cubes, cover them in sauce
- serve with rice and steam veggies
- enjoy!
