Delicious Easy Beef Stew - Autumn Recipes
This recipe always marks the end of summer for me, when the weather turns colder, I always crave some warm and hearty beef stew. This 'Beef Stew' recipe is super easy and always turns out great. I've made it many times for friends and family, it's always a hit. Who doesn't love a big bowl of goodness on a cooler autumn day? Give this delicious recipe a try!
Beef Stew
serves 3-4 total cooking time 2hrs
ingredients
- 1 tbsp cooking oil or butter
- 2 lb beef, cubed into 1-inch pieces (can substitute for lamb)
- 2 tbsp balsamic vinaigrette
- 3 carrots, peeled and cut into rounds
- 1 large onion, diced
- pinch of salt
- freshly ground pepper
- 3 garlic, pressed
- 1/4 can of tomato paste
- 1 tsp cumin
- 1 tsp paprika
- 5 cups beef broth or 2 tbsp of beef bouillon and 5 cups of water, warm
- 1 cup red wine
- 1 tbsp Worcestershire sauce
- 3 sprigs rosemary
- 2 lb mini potatoes, halved
- 1/4 parsley, minced for garnish
- baguette for serving
directions
- in a large Dutch oven or pot, heat oil or butter
- sear beef, working in batches, remove and set aside
- deglaze pan with balsamic vinaigrette, stir for 1 minute
- add onions and carrots, let cook down, about 5 mins, add salt and pepper
- add garlic and tomato paste, and cook until tomato paste has darkened about 2 mins
- add cumin and paprika, and return the beef to the pot
- add warm beef broth, Worcestershire sauce, rosemary and mini potatoes
- bring pot to a boil and turn down to simmer for 2 hours
- serve with freshly baked bread
- store extra in an airtight container and fridge for 3-4 days, and reheat when ready to serve, great for meal prep
