Simple & Delicious Vegetable Udon Noodles: My Go-To Comfort Food
When I need a quick, tasty meal that feels like comfort in a bowl, vegetable udon noodles are always my answer. There's just something so comforting about the chewy udon noodles paired with a medley of colorful veggies. The best part? This recipe is as simple as it gets. With frozen veggies and a sauce that comes together in minutes, it's perfect for busy days when you still want something homemade and satisfying. Whether I’m in the mood for a light lunch or a cozy dinner, this dish never disappoints!

Vegetable Udon
Ingredients
Serves 2-3 Total Cooking Time: 15 mins
- 4 packs of udon noodles
- 1 1/2 cup of mix frozen veggies
- 1/3 cup soy sauce
- 1 tbsp hoisin sauce
- 1/2 tbsp fish sauce
- 1 tsp sesame oil
- 1 tbsp butter for cooking
Directions
- cook udon for three minutes in boiling water, or until the noodles loosen, rinse in cold, and set aside
- in a bowl combine soy sauce, hoisin sauce, fish sauce, and sesame oil, set aside
- preheat a wok on medium-high, add 1/2 tbsp butter and veggies
- cook for 2-3 minutes, until veggies soften, then add cooked noodles and sauce
- combine well for 2-3 mins, add more butter to the side of the wok if the noodles start sticking
- serve with your favorite protein or enjoy by itself, the noodles are that good!
