Meatballs

Ingredients

  • 300g ground beef
  • 1 small onion, minced
  • 1 small slice bread
  • 3 tbsp milk
  • 1 tbsp smoked paprika
  • Salt and pepper

Directions

1. Preheat your broiler to high. In a bowl, combine the ground beef, minced onion, bread (softened with milk), smoked paprika, salt, and pepper.

2. Form into small meatballs and place them on a baking sheet. (Pro tip: use a tbsp to make perfect balls)

3. Broil for 5-6 minutes per side, until golden brown and just cooked through.

Soup

Ingredients

  • 1 cup onion, chopped
  • 1 cup carrot, chopped
  • 1.7L water
  • 2 tbsp chicken bouillon
  • 1/2 cup tiny pasta (like orzo or stelline)
  • 2 cloves garlic, pressed or minced
  • 1 tbsp oregano
  • 2 tbsp honey
  • Salt and pepper, to taste
  • Cooked meatballs
  • Butter for cooking 

Directions

1. In a large pot, add butter and sauté the chopped onion and carrot until softened.

2. Add water, chicken bouillon, garlic, oregano, honey, salt, and pepper. Bring to a gentle boil.

3. Stir in your pasta and cook until tender, about 6-8 minutes.

4. Add the broiled meatballs, simmering for another few minutes until warmed through.

5. Serve warm, and enjoy the comforting flavors of this easy Italian wedding soup.
