Ingredients
- 1 ½ cups flour
- 3 eggs
- 1 cup brown sugar, lightly packed
- ¾ cup butter, melted
- ½ cup coffee (for extra depth!)
- ¼ cup kefir (for a dose of probiotics)
- 2 tsp baking powder
- 1 packet vanilla
- Pinch of salt
- 1–2 cups chocolate chips (your call on how chocolatey you want it!)
- ¼ cup peanut butter
Directions
1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
2. In a large bowl, whisk the eggs and brown sugar until smooth.
3. Pour in the melted butter, coffee, kefir, and vanilla, and stir until well combined.
4. Add flour, baking powder, vanilla and salt, then mix until just incorporated. Don’t overmix!
5. Fold in the chocolate chips and peanut butter, distributing evenly.
6. Pour the half batter into your greased loaf pan, add half the chocolate chip and drizzle with peanut butter, fill the pan with the rest of the batter and top off with the leftover chocolate chip and peanut butter
7. Bake for 50 mins to 1 hour, or until a toothpick inserted in the center comes out clean. Let it cool slightly before slicing in—you want those chocolate chips to be gooey but not too hot.
Enjoy this mood-boosting breakfast loaf with a side of gratitude and a cozy morning ritual. It’s the kind of breakfast that feels indulgent but keeps you fueled and feeling good long after. Grab a slice, take a deep breath, and let the day begin with a little extra warmth and chocolate!
