Recipe: "Must-Try" Delicious BBQ Shrimp with Sweet Pepper Rice
This is one of my favorite dishes, it is absolutely delicious! It's so quick and easy you have to try it!
BBQ Shrimp with Sweet Pepper Rice
Serves 3 Actual Cooking Time: 15 mins Total Cooking Time: 25 mins
sweet pepper rice ingredients
- 1/2 cup diced carrots
- 1/2 cup diced onions
- 1/2 cup red pepper
- 1/2 cup yellow pepper
- 1/2 cup cherry tomatoes cut in half or 1/2 tomato diced
- 2 tbsp olive oil
- salt and pepper
- 1 cup balsamic rice
- 1 cup chicken broth
- 2 cups of water or what the rice package requires for cooking
- 1 tbsp ketchup
- 1 tbsp lemon juice
- green onions for garnish
bbq shrimp ingredients
- 27 fresh shrimps, deveined
- 3 tbsp Korean bbq sauce or 1 tbsp of each; dark soy sauce, brown sugar, sesame oil
- 2 cloves of garlic crushed
- 1 tbsp chili flakes
- 1 tbsp lemon juice
- salt and pepper
- 9 wooden skewers
- 1 tbsp cooking oil
- preheat a small pot on medium/high
- add olive oil
- saute veggies until cooked down
- add rice and water
- bring to a boil then turn down to medium until rice is done cooking
- turn to low, add ketchup and lemon juice, mix well, set aside
- combine all ingredients and shrimp
- let shrimp marinate for at least 30 mins or overnight
- soak wooden skewers in water for a few minutes to prevent burning, you should trim the skewers if they do not fit the grilling pan
- add three shrimps on each skewer, shake off excess marinade
- preheat grill skillet on medium/high
- grease with cooking oil
- cook shrimp for about 2-3 minutes on each side, do not overcook
- grab a small mug or bowl, fill with the sweet pepper rice, flip onto a plate
- add a side of delicious shrimp skewers garnished with green onions
- *it's best to grill the shrimp when they're at room temperature
