Healthy Tomato and Feta Cheese Chickpeas


Chickpeas are a high source of fiber and protein. They are great for side dishes and snacks. This is my favorite chickpea side, it can be served instead of rice or salad. Give this quick Tomato and Feta Cheese Chickpea recipe a try the next time you're looking for a healthy kick your lunch or dinner. 


Tomato and Feta Cheese 'Chickpeas'

total cooking time: 15 mins  serves 2-3

ingredients
  • 1 can chickpeas, rinsed and drained
  • 2 tbsp paprika
  • 1 tbsp chili powder
  • 2 tbsp butter
  • salt and pepper
  • 5 tbsp feta cheese 
  • 1 small tomato, diced

directions
  1. drain one can of chickpeas
  2. in a bowl, add paprika and chili powder
  3. add chickpeas, mix well
  4. preheat a non-stick skillet on medium/high, add butter
  5. add chickpeas, cook until golden for 5-6 minutes
  6. add salt and pepper based on your preference
  7. on a plate, add a few heaping spoonfuls of chickpeas, top with tomatoes and crumbled feta cheese
  8. serve immediately
