Korean Glass Noodle Recipe

Korean glass noodles are light and delicious. The perfect Korean stir-fry noodle dish starts with authentic Korean bbq sauce and their unique glass noodles.  It's super easy to make this noodle dish at home with my easy recipe, filled with eggs, peppers and Korean style bbq chicken, this is the perfect dish for any day of the week. Korean Chicken Glass Noodle Stir-Fry

total cooking time: 45 mins serves: 3

Korean bbq sauce ingredients for marinating protein
  • 1 tbsp sugar
  • 1 tbsp honey
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tsp sesame seeds
  • 1 green onion minced
  • 1 tsp pepper
  • 2 tsp pear puree (optional)
noodle stir-fry ingredients
  • 4 small organic chicken thighs deboned, cubed or 1 steak, cut thinly
  • 2 green onion cut into 1 inch
  • 1/4 red pepper
  • 1/4 orange pepper, sliced thinly
  • 1/4 yellow pepper, sliced thinly
  • 1 shallot diced
  • 1 egg
  • cooking oil
  • 4 oz of cooked Korean glass vermicelli noodle
Korean BBQ sauce ingredients for noodles
  • 1 tbsp sugar
  • 1/2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sesame seeds
  • 1 green onion minced
  • 1 tsp pepper
  • 1 tbsp water
directions
  1. cook noodles per package direction, rinse well under cold water and set aside
  2. combine marinade ingredients, add chicken or beef, let marinate for at least 15 minutes
  3. in a small bowl combine Korean BBQ sauce ingredients for the noodles, stir well, set aside
  4. in a wok, on medium/high heat, add 1 tsp of cooking oil, add shallot, orange and yellow peppers
  5. cook until soft, about 3-4 minutes, remove and set aside
  6. add 1 tbsp of cooking oil, add egg
  7. let cook and flip, about 2-3 minutes, remove and set aside
  8. scrap clean the wok, add 1 tbsp of cooking oil
  9. add chicken or beef
  10. cook the chicken or beef until caramelized or done should be 5-6 minutes
  11. return cooked egg and veggies to the wok, add sauce
  12. cook for 2 minutes, using tongs, add the glass noodles
  13. spread the noodles and combine everything well
  14. taste, add salt and pepper
