Easy and Delicious Italian Mushroom Risotto
This COVID19 - quarantine is very hard for many who are used to eating out. But let's take this opportunity to make our favorite restaurant dishes at home. Risotto is one of my favorite Italian dishes. Rich and creamy, this Mushroom Risotto recipe is super simple to make.
The best part about this recipe is the addition of mushrooms. They are full of protein and fiber, the best part is that they contain Vitamin B and a unique antioxidant called selenium, known to help with cell repair and improving immunity. I love incorporating mushrooms into my dishes. Give this easy healthy recipe a try!
Easy and Delicious Mushroom Risotto
total cooking time 30 mins serves 4
ingredients
- 1.5 cup italian rice
- 6-8 cup chicken broth
- 5-6 mushroom sliced
- 1 small onion diced
- 2 cloves garlic minced
- 4 tbsp butter
- 2 tbsp parsley minced
- 2 tbsp freshly grated parmesan cheese (optional)
directions
- in a small soup pot, warm chicken broth on medium heat
- preheat a medium-wide brim skillet on medium heat
- add 1 tbsp butter, add garlic and onions
- saute until onions are translucent, add mushrooms continue cooking until mushrooms are soft
- remove and set aside
- add 2 tbsp butter to the skillet
- add Italian rice, stir well, cook until slightly golden
- add the warm chicken broth one cup at at time to the rice in the skillet
- stir well, let the broth absorb completely, continue adding broth and allowing it to absorb
- your risotto is ready when the rice has absorbed all the broth and it's soft
- return the mushroom and onions, combine well, continue to cook for 2-3 minutes
- when ready to serve, garnish generously with parsley and parmesan cheese
- serve warm
- enjoy!
