Healthy and Delicious Beef and Barley Stew
Sometimes you just need a hearty homestyle soup for a little extra comfort during these uncertain times. Filled with carrots, potatoes, and chunks of beef, this Beef and Barley stew is definitely one of my favorite soups to make. With the addition of tiny barley, this stew also provides you with an extra boost of vitamins and nutrients. Barley is known to help boost your immunity, as it's high in antioxidants. Give this easy healthy recipe a try!
Healthy and Delicious Beef and Barley Stew
total cooking time 1.5hrs serves 3-4
- 1 medium steak
- 1 large carrot, diced
- 1 celery, diced
- 1 small onion, diced
- 1/2 shallot, diced
- 1 small potato, diced
- 4 tbsp flour
- 3 tbsp butter
- 1 tbsp olive oil
- 3 tbsp tomato paste
- 1 beef bouillon cube
- 4 cups of water
- 1 tsp fresh rosemary
- 1 tsp oregano
- 3 bay leaf
- 1 tsp salt
- 1 tsp fresh cracked black pepper
directions
- in a skillet brown both sides of the steak, 3 minutes on each side, remove and cut into cubes, set aside
- in a medium soup pot, add olive oil, carrots, celery, shallots and onions, cook until onions are translucent
- add flour and butter, stir well, slowly add 1 cup of water at a time
- add tomato paste, beef bouillon cube, rosemary, oregano, bay leaf, salt and pepper
- return beef chunks to pot
- bring to a boil, add potatoes
- let cook for 1-2 hrs
- when ready to serve, serve with bread
- enjoy!
