Big Mary Original Chicken Sandwich - Mary Brown's Copycat Recipe
Living in a small town limits what fast food chains are available, it isn’t that bad cause we like the challenge of recreating our favourite fast food at home. I love going to Mary Brown's, their sandwiches are always juicy and delicious! This Big Mary Sandwich copycat recipe is made of tender juicy crunchy cajun chicken with mayo on a soft brioche bun. It’s super easy, give this awesome recipe a try!
Mary Brown's Chicken Sandwich
servings 2 total cooking time: 20 mins
ingredients
- 2 chicken thighs
- 2 egg
- 1 tbsp water
- 2 cups flour
- 1 tbsp Cajun spice
- 2 brioche buns
- 1 tbsp mayo
- 1/2 cup shredded lettuce
- 2 slices of pickles circle shape
- 1 cup cooking oil for frying
directions
- set up chicken station, in one bowl, add eggs and water, whisk to combine
- in second bowl, add flour and Cajun spice, whisk well
- preheat a non-stick skillet, on medium, add oil
- drench chicken with eggs, then flour, then eggs and flour again
- repeat for second chicken thigh
- place thighs into hot oil, cook for 3-4 minutes on each side
- remove and finish in the air-fryer at 350 degrees for 10 mins
- toast buns, add mayo on bottom layer, add fried chicken, lettuce and top bun
- garnish with a slice of pickle for that authentic Big Mary taste
