Thai Chicken Coconut Green Curry - Better Than Takeout



I love getting Thai takeout, one of my favourite dishes to order is Chicken Coconut Green Curry. A blend of aromatic ginger, spices with the sweetness of coconut makes this dish perfect for lunch or dinner. Give this super quick and easy recipe a try! 




Thai Chicken Coconut Curry

serves 2 total cooking time: 25mins

ingredients

  • 1 can organic coconut milk
  • 1 tbsp soy sauce
  • 2 tbsp green curry paste
  • 2 tbsp brown sugar
  • 1 lime, juiced
  • 2 garlic, pressed
  • 1 tbsp ginger, grated
  • 2 cups of frozen vegetable 
  • 4 medium size chicken thighs, cooked, sliced 
  • 2 cups freshly cooked rice

directions 

  1. cook rice and air fry chicken, set aside
  2. on medium-high heat, in a large saucepan, add coconut milk, curry paste, soy sauce, sugar, lime juice, garlic, and ginger, mix well
  3. bring to a simmer, add veggies, turn to low, and let cook down
  4. add cooked chicken, let simmer for 6 minutes
  5. serve with warm rice
