Thai Chicken Coconut Green Curry - Better Than Takeout
I love getting Thai takeout, one of my favourite dishes to order is Chicken Coconut Green Curry. A blend of aromatic ginger, spices with the sweetness of coconut makes this dish perfect for lunch or dinner. Give this super quick and easy recipe a try!
Thai Chicken Coconut Curry
serves 2 total cooking time: 25mins
ingredients
- 1 can organic coconut milk
- 1 tbsp soy sauce
- 2 tbsp green curry paste
- 2 tbsp brown sugar
- 1 lime, juiced
- 2 garlic, pressed
- 1 tbsp ginger, grated
- 2 cups of frozen vegetable
- 4 medium size chicken thighs, cooked, sliced
- 2 cups freshly cooked rice
directions
- cook rice and air fry chicken, set aside
- on medium-high heat, in a large saucepan, add coconut milk, curry paste, soy sauce, sugar, lime juice, garlic, and ginger, mix well
- bring to a simmer, add veggies, turn to low, and let cook down
- add cooked chicken, let simmer for 6 minutes
- serve with warm rice
