Tumeric Chicken Noodle Soup - Immunity Boosting and Anti-Inflammatory Soup

Tumeric Chicken Noodle Soup
serves 2
ingredients
- 2-3 chicken thighs
- 2 carrots, peeled and sliced
- 1/2 onion, diced
- 1/4 cup filini pasta noodles
- 2 cloves garlic, pressed
- 1 tbsp ginger
- 2 tsp grated tumeric
- 1 tbsp cooking oil
- pinch of salt and pepper
directions
- in a medium soup pot on medium/high heat, add cooking oil, add diced onions and carrots, saute for 3-4 mins
- add garlic, ginger and tumeric
- push veggies aside, add chicken, let cook for 1 minute on each side
- add water until the pot is 2/3 full, bring to a boil
- add noodles, turn down to low, let cook for 20 minutes
- before serving, remove chicken and cut into chunks, return chicken to soup
- add salt and pepper
- serve warm
