This super easy oven baked Vietnamese 'Bank Mi' recipe came out of a necessity to recreate street style banh mi sandwiches quickly at home. 30 Min 'Banh Mi' Sandwich

total cooking time: 30 mins serves 3

ingredients
  • 6-8 chicken thighs, deboned (about 2-3 per sandwich)
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 1 small onion diced
  • salt and pepper
BBQ sauce
pickled carrots
  • 1 small carrot, match sticked
  • 1 tbsp sugar
  • 2 tbsp vinegar
  • 1 tbsp water
  • 3 baguettes
  • 4 tbsp mayonnaise
  • 1/2 small red onion, match sticked
  • a handful of parsley
directions
  1. preheat oven to 400F
  2. in a ziplock bag, combine chicken and marinade ingredients
  3. for pickled carrots; in a small bowl, combine; sugar, vinegar, water, mix well, add carrots, set aside
  4. line a baking pan with aluminum foil for easy cleaning
  5. lay chicken thighs on a baking pan, bake for 10 mins
  6. meanwhile, prepare the bbq sauce; in a small bowl combine bbq sauce and sweet chili sauce, 
  7. remove chicken, flip the chicken and glaze it with the bbq sauce
  8. bake the chicken for another 10 - 15 minutes until done, broil on the last 3-4 minutes
  9. remove, let sit for 5 minutes, cut diagonally
  10. open baguette to make a sandwich, toast or broil in the oven for 2 minutes
  11. generously spread mayonnaise on both sides of the baguette, add chicken, onions, cucumbers, pickled carrots, and parsley
  12. cut in half and serve warm
