Delicious 30 Min Oven Baked Vietnamese BBQ Chicken 'Banh Mi'

30 Min 'Banh Mi' Sandwich
total cooking time: 30 mins serves 3
- 6-8 chicken thighs, deboned (about 2-3 per sandwich)
- 1 tsp soy sauce
- 1 tsp sesame oil
- 1 small onion diced
- salt and pepper
BBQ sauce
- 4 tbsp smokey bbq sauce
- 2 tbsp sweet chili sauce
- 1 small carrot, match sticked
- 1 tbsp sugar
- 2 tbsp vinegar
- 1 tbsp water
- 3 baguettes
- 4 tbsp mayonnaise
- 1/2 small red onion, match sticked
- a handful of parsley
- preheat oven to 400F
- in a ziplock bag, combine chicken and marinade ingredients
- for pickled carrots; in a small bowl, combine; sugar, vinegar, water, mix well, add carrots, set aside
- line a baking pan with aluminum foil for easy cleaning
- lay chicken thighs on a baking pan, bake for 10 mins
- meanwhile, prepare the bbq sauce; in a small bowl combine bbq sauce and sweet chili sauce,
- remove chicken, flip the chicken and glaze it with the bbq sauce
- bake the chicken for another 10 - 15 minutes until done, broil on the last 3-4 minutes
- remove, let sit for 5 minutes, cut diagonally
- open baguette to make a sandwich, toast or broil in the oven for 2 minutes
- generously spread mayonnaise on both sides of the baguette, add chicken, onions, cucumbers, pickled carrots, and parsley
- cut in half and serve warm
