Recipe: "Must-Try" Delicious Cherry & Watermelon Pancake
Tips for making the perfect pancakes
*use a measuring cup to pour batter or a pancake dispenser
*use oil to grease your pan, you need very little oil, butter burns on high heat
*wipe the pan with an oiled paper towel in between to clean and re-grease
*wait for enough bubbles to form in the middle and sides before trying to flip the pancake
Cherry Watermelon Pancake
Serves 3-4 Total Time 45 Mins
cherry reduction ingredients
- 1/4 cup cherry, halve and pitted
- 4 tbsp sugar
- 1/4 cup water
- 1 tsp lemon juice
- 1 1/2 cups all-purpose flour
- 3 1/2 tsp baking powder
- 1 tsp vanilla extract
- 1 egg
- 1 1/4 - 1 1/2 cups milk (more if you live in dryer region)
- 3 tbsp melted butter
- 1 cup watermelon diced for topping
- 1 tbsp butter or oil for greasing pan
cherry reduction direction
In a small saucepan, bring ingredients to boil, let simmer on low and reduce until it becomes a syrup consistency, place asidepancake direction
- preheat a non-stick skillet on medium/low
- in a mixing bowl, sift all dry ingredients together, mix well
- add wet ingredients together, mix well but try to not over mix
- pour 1/4 cup batter at a time into greased skillet
- wait for bubbles to form in the center and around the edges, 3-4 mins then flip
- continue to cook for another 2-3 minutes
- stack pancakes, add a heaping spoonful of cherry reduction and fresh watermelon on top
- finish with your favorite maple syrup for a delicious breakfast!
